The script plays a realistic animation while they work on removing the sign. Once they are done, the sign is placed directly into their inventory as an item.
Of course, players need a place to sell what they steal. The script includes a hidden NPC buyer located in a shady part of town. Players can take their stolen signs to this NPC and sell them for money. You can completely change the prices in the configuration file to balance your server's economy.
